This fish was developed in Thailand. The Thai name 'tabtim' meaning 'ruby' alludes to the colour. The fish is raised in Thai government certified farms ensuring consistent good quality and safety.

Store chilled in ice or refrigerator (0-5C). Consume within 2-3 days. Do not freeze.
Whole fish are suited to slow roasting or grilling over hot coals, deep frying whole (deep cuts along the flesh), or steaming. For slow roasting, a thick layer of salt, flour and water can be applied to the outside of the fish. This keeps the flesh inside moist and succulent. The fish can also be stuffed with Thai herbs and spices to greatly enhance the overall flavour.
