Native to the Mekong delta in South Vietnam, it is now farmed extensively along the delta and processed for export in large modern certified factories.
White, lean meat, firm but tender, and characteristic mild buttery flavor.
Stored in freezer (-18C or colder) for not longer than about 3-6 months. Defrost slowly overnight in refrigerator, then store chilled (0-5C) in ice or refrigerator. Consume within 2-3 days of thawing. Do not refreeze.
Once thawed, this fish can be grilled, BBQ'd, poached, marinated, or stir-fried (pieces).
